Today is the end of three weeks

And I hope the beginning of many many more. Today marks the end of my third week being 100% raw. I know you're probably sick of hearing about the raw thing, but get this...


* My anxiety and relentless worry is completely gone
* I'm not feeling my usual winter depression creeping up
* My usually grossly dry and itchy elbows are miraculously soft now, without any lotions or creams!
* I've lost 14 pounds and over 6 inches
* My body fat has gone down 4% in the past 2 weeks (I didn't measure it the first week)
* My mom, sister and Gadgetman have all commented that I am happier and in a better mood



When I first started, I worried about Thanksgiving. I absolutely love turkey, and Thanksgiving is my most favorite holiday ever. Alas, I made it through still raw, and that includes a family dinner with Gadgetman's side of the family. My mom and I prepared a separate meal for ourselves (she is almost 5 months raw and is down 43 pounds):

The one dish in the big picture that I didn't get a closeup of was rosemary-garlic "mashed potatoes" made with jicama. My mom didn't care for it, I thought it was okay as long as I didn't think it was going to taste like real mashed potatoes.

This one the sunflower seed "mayo" turned gray so it looks nasty- but trust me, it's a Waldorf salad and it was delish:

The name of this one escapes me, but it tastes exactly like the regular Thanksgiving dish we always have- cranberries, apples, oranges....yum!

And my most favorite of it all (and my mom's)- Strawberry Pie. The filling was reminiscent of melted strawberry icecream. We decided that next time the entire top of the pie will be covered in strawberries.
We made this the night before and so the strawberries sunk in by the time I got to taking the picture on Thanksgiving.

Raw

I've had a few people ask about doing raw, and here are some of my insights so far:

What do I eat? Here's what I've eaten today:

Breakfast- Smoothie made from frozen mixed fruit, a frozen banana, and water to thin it. Frozen is okay as long as it doesn't have any other ingredients (sugar, preservatives, etc.). I didn't add it, but you can use agave or raw honey to sweeten it if you like that.

Snack- Apple

Lunch- Raw taco (also called Raco, but I said that the time that I call it a Raco is the time that I quit doing raw :-[). This is one of my most favorite raw dishes so far, and it's sooo easy!

Snack- Orange

Dinner will be raw spaghetti- fresh sauce made in the blender with zucchini noodles.

After dinner snack- I have some cookies I made in the dehydrator- delish, and very easy. I usually have some raw almonds with a little bit of agave drizzled on them if I want a snack while we watch our show.....mmmm......

In the beginning, I thought that I would never get enough to eat this way. Now, it's sometimes noon before I realize that I need to eat. I find that I get full with not a lot of food, I don't have cravings (stuff smells good, and I like to joke that I'm missing out, but I don't have an overwhelming desire to scarf naughty foods down :-[), and I stay full for a very long time with the smaller amounts of food.

Other things that I've made so far (remember that this is only my third week and the first week I ate strictly plain fruits and veggies):

-Mock turkey with fresh cranberry sauce
-Pumpkin pie
-Corn Chowder
-Stuffed mushrooms (mushed avacado mixed with diced tomatoes and onions stuffed into a mushroom that has been marinated in nama shoyu, which is a naturally brewed soy sauce that you can get at the HFCS and isn't too spendy)
-Broccoli soup- this was "meh"- I don't think I'll rush to make it again, but I didn't hate it so much that I wouldn't eat it.
-Mock ranch dressing- used this to dip veggies it, it was yum but I only made half the recipe because it makes a lot

I'll have more to give insight on after Thanksgiving, my mom and I are doing a separate raw meal for just her and I :)

As for having to eat everything cold- not necessarily. You can heat things, but they can't go above 115* F. I use the dehydrator to heat stuff, and I also have a candle/mug warmer that I use- but I have to constantly check on it because it has the potential to go above 115*.

I've found that the must-haves to do this are a food processor, a blender and preferably a dehydrator. I haven't read this book, but I'd love to read it- it's got simple and machine-free recipes.
Raw Foods For Busy People

I'm already yearning for a Vitamix (super powerful blender), a fancy square dehydrator like the Excalibur or the Good4U, and a bigger food processor (mine is a dinky 1.5-2 cup model), but even with my basic tools I'm finding it do-able. My other "wants" are a spiraler (to make the zucchini noodles) and a Soyajoy (make raw milk), but I can use my mom's spiraler and Soyajoy (though raw almond milk isn't super hard to make by hand either, it'd just be easier with the gadget).

Well, we opened it in the nick of time (11/14) since payday is usually on the 15th of the month. Since this month the 15th fell on a non-banking day, it was processed on Monday and cleared the account today! The blackened areas are just to keep my checking account number private.

I'm such a copycat

My mom has been raw for over 4 months now and I've jumped onto the bandwagon. Actually, it wasn't really a conscious decision- I just happened to look at the clock around 2:30 and realized I had eaten only raw for the day (leftover veggies from the baby welcoming party we threw for my niece). That started it, and today is day 9 of being 100% raw.

Last night I made "spaghetti". Remember that in raw, you use only all natural ingredients and they have to be raw- from nature. You can't take noodles, soak them in water and call it raw. Here's how to make raw spaghetti- this recipe doesn't actually taste like spaghetti, but it tasted okay as long as you don't have your hopes set on it tasting like the real deal.

Ingredients:

I actually ended up using 3 tomatoes rather than the two shown in the picture.

Cut up the carrots, toss in the blender

Add the Braggs

The olive oil (cold pressed for raw, which mine isn't- but will be when I run out of the "old" stuff. I just can't bring myself to waste olive oil)

Blend it all up until it's smooth. Using a regular blender, this will probably involve some cursing and major jealousy over those who have fancy Vitamix blenders that can chop steel, when yours balks at carrot chunks.

Now for the "noodles"
Don't be shocked at the huge ingredient list:

A lone zucchini. Maybe 2, if you want more noodles. I used one. Take a peeler to it.

When it's naked, take the peeler to it again, shaving "noodles" off of it until you get to the seeds

Put your sauce on top, and voila! Spaghetti!

I'm so sad that Prop 8 didn't pass. I think it's all in the wording of it- there should be religious marriages and civil unions. I don't understand why two consenting adults cannot enter into a legally binding contract just because they are both female or both male.

Slow as all getout this week, why do they even bother doing updates if it's just going to crash the whole thing? I was shooting for $1,500 but I'll be lucky to get $820 at this rate. Oh well, something is better than nothing, right?!
